Sadly Spyderco hasn't made kitchen knives for a while :(

That said, you can still find new in box Yin & Yang models. One is plain edge and one is serrated both with classy wood handles and about 6" blades. I think Country Knives has them in stock still but they are about $85 per blade so I don't know on your budget. They also have the Sashimi listed.

Here are those knives I mentioned:

Yin: http://www.spyderco.com/catalog/details.php?product=240
Yang: http://www.spyderco.com/catalog/details.php?product=239
Sashimi: http://www.spyderco.com/catalog/details.php?product=139

I have a little 4" serrated kitchen utility "Sermollan" model and it does quite well. Can still find these on Ebay occasionally with some other old kitchen knives.

Goodluck! I hear good good things about the Yin/Yang.

IIRC, Alton Brown states on a video about the Shun knives that they are made primarily of VG-10 with some sort of damasteel for that cool look. Upon hearing that I looked into what Spyderco had along the same lines (I don't NEED the cool damascus look in the kitch), but sadly, there was no current production of the larger santoku or chef's knife by the time I found out about them. :( I'd love it if Spyderco brought them back for a sprint run...

(on a side note, Alton is seen using a Spyderco folder in some early episodes of Good Eats. Later he's seen using a Kershaw folder, presumably because they are the ones marketing the Shun series that he endorses.)

The mules make nice small kitchen knives, also good steak knives. They are almost out of the mt05 run, so order soon if you want to get one of them. The mt05 are bargain priced at $19.95. Might be the last one that is priced this low. Some people grind off the lower tang bump for kitchen duty... it's not called a uvula but that describes it. You'd of course need to make a handle or buy one. Halpern might have some that you can buy in time for xmas... see http://www.usualsuspect.net/forums/show ... p?t=444602
