Spyderco Kitchen Classics
I am tempted to purchase Spyderco Kitchen knives- they are beautiful. Does anyone has this knife, any thoughts if it is worth buying? thanks!

You might have to be more specific. Spyderco make quite a few different kitchen knives, ranging from the $20 Z-Cuts to the Carter Itamae series in Aogami Super.

If you specifically mean the polypropylene handled knives, I have the K03 Pro Culinaire Carving Knife, which I think may be discontinued?
I won it in a competition which Sal kindly ran to benefit the Colorado Childrens Hospital.
It’s an excellent knife and I use it often, which says something, as most of my other kitchen knives are handmade Japanese knives from Kyoto and Sakai bladesmiths.
The MBS-26 steel takes a superb edge and sharpens well. It’s stainless, but not especially so. The handle is comfortable in a variety of grips. Despite having a slight right hand bias in the pinch grip position, it’s still comfortable for a left hander.
They might look like a multitude of cheaper knives, but they’re serious kitchen tools, designed well, and with better steel than most of the other decent production kitchen knives on the market, like Wusthof, the basic Henckels line, F. Dick, Global etc.
I also have the serrated VG10 K11 Cook’s Knife, which is beautifully made. But I haven’t used it, as I’m saving it for a gift for someone - I already have enough kitchen knives.

I've got two of the best kitchen knives Spyderco ever made in my opinion. The K-04 & K-05 models have been in my kitchen knife set ever since 2004. And they continue to be handy blades made of MBS-26.
I've wanted to snag one of those older paring knives of theirs for years now but the timing hasn't been good for whatever reason.
I also love the serration pattern on Spyderco's kitchen knives as well.

I’m not sure why the K03 was discontinued, but I’d assume that it was a combined factor of market sales and possibly using that manufacturing capacity for more popular models.
A dedicated carving knife with an 8” blade is a fairly specialised knife, compared to some other kitchen knife patterns.
The 4.5” and 6.5” Utility knives are no doubt more popular and versatile in general kitchen use.
My recommendation, for what it’s worth, is to not buy kitchen knife sets or blocks. I feel they’re a bit of a marketing gimmick relative to the usefulness of the knives you get versus the price you pay.
I usually recommend that you decide how much money you wish to spend first, then allocate about 70-80% of that on a good chef knife or an all rounder like a Santoku. Then use the rest to buy a serrated bread knife and a paring knife.
If you want other knives later, it’s easy enough to add them, but you’ll probably find that combination serves you pretty well.
I can recommmend the Z-Cuts if you want table knives too.
So you might want to try a Spyderco Santoku and the Bread Knife and one of the 4.5” Utility knives or the Paring knife?

I’m very far from a chef of any kind, my friend :D , but I do enjoy cooking and learning about knife patterns and blade shapes by using them for all the varied techniques of food preparation.

The Z-Cuts are fantastic paring knives. I use mine nearly daily. (Some like to use them as steak knives, too). They are fully serrated and the BD1N seems to be close to VG-10 in performance. The ultra thin blades really slice well.
I also have the K05. MBS-26 holds a great edge and the Spyderedge will go through even a tough roast, will still being able to slice paper thin tomato slices. It is stainless, but not as stainless as VG-10 or something. It will develop rust spots if left in long over night contact with other metals like a drying rack.
These knives have replaced my more expensive knives, if that tells you anything.
The new Murray Carter series is more high end but not stainless.

Well Doc I'm sure you can probably identify with what I'm saying. In the past 3 years I've latched on to some really awesome German made kitchen/culinary blades made by J.A. Henckel, Wustof, Messermeister and a couple of other companies I've never heard of. My local thrift store let me have most of them for less than $2 each. And I've got an awesome set of culinary knives I've put together in the past 3 years or so. I also use my old AUS-8 Full SE Catcherman model a lot during the week for food stuff. I also use both of my TEMPERANCE 1 models ( SE & PE) in the kitchen at least 2 to 3 times a week as well.
I've found that my Spyderco blades being handy I really don't need anything else. I find myself NO LONGER using those fancy German made blades most of the time.

Our Z-Cuts just arrived in the mail this past Saturday. My wife used them on Sunday to prepare some snacks for football. I got one in both PE and SE. She said she definitely preferred the SE model. I haven't used them yet besides to slice a lemon for my morning glass of lemon water. She thinks their definitely worth that $20 a piece price though!

I can relate. The PE and SE Z-Cuts are a lot of fun to use side by side, comparing them on different foodstuffs.
I was surprised by how comfortable they are to use as well.

I wonder if Spyderco actually has plans for a folding chef knife for 'adventure chefs' that travel and cook on the go? I was really tempted to find out how well the MM ones are but being an edc spyderco fan, I wish spyderco made ones that are lc200n steel instead

My parents have had a "full" set of their MBS-26 kitchen knives for over 30 years and they don't look much worse for wear than the brand new set I bought for my sister-in-laws wedding, and thats my parent's only kitchen knife set so they see plenty of wear. They are FANTASTIC knives and won't break the bank. The Santoku, bread knife and 6.5 utility knife are probably my 3 favorites.
