Someday I will upgrade my kitchen knife set with an itamae knife, because they are really attractive.
Or, if I get really crazy, create a similar one by forging a sanmai with an Aogami core.

I think one is all you need. This shape does very delicate work. I’d recommend starting with the size chef knife you use most commonly and see where your other needs are and slowly collect them.

I thought Mule at first, but the spydie hole looks too big for that. No maker mark. What other leaf shape blades do not have a maker's mark. Tenacious is out. Maybe the Resilience but the blade looks smaller.
