Wasn't the Sage 1 also a laminate CF over G10?

Yes, the Sage 1 and Sage 3 are laminates as well. Three different types, three different textures.

Could you please4 tell me the difference between the Sage 1 CF and the sage 5 Peel Ply CF?
Is peel ply more like G10? Thanks for any info.

It's been my experience that's Spyderco's peel ply texture is more aggressive than typical Spyderco G10. I can't speak for the texture on the Sage 5 having not handled it in person. If I were going to rank them in order of abrasiveness from most to least, it would be:

Peel ply CF
Sage 1/Chaparral twill CF
Sage 3/Domino/Dice cubic CF

A couple of thoughts on the Sage 5:
The nested liners will make it easy to discern from the Sage 1, as will the lanyard hole, and of course the compression lock and peel ply CF/G10 scales.
I would like to see the black wire clip instead of the shiny one, and the lanyard hole is unnecessary IMHO for a gent's folder.
That said, the Sage 5 is a must have for me, in any configuration.
While I doubt it will happen, wouldn't it be cool to have a sprint run or dealer exclusive Sage 5 with S110V or some other high test blade steel?

All 3 very interesting knives that all stand a good chance to end up my collection and see some proper use.
Jumpmaster 2 is the main candidate, liked the Sage a lot but it will have very stiff competition from the PM3..

This year has been especially difficult. In the past a few would peak my interest...2016-2017 is going to be a rough time for the wallet. :o :D

Since I bought my first Spyderco, I've been carping about how they haven't given us any 3-inch and under compression lock folders, and it looks like there are at least 4 of them in the pipeline all at once (Sage 5, Oroborous, Rhino, PM3). When it rains, it pours.

Very useful thanks. So G10 would fit between the sage 1 and the peel ply? I find G10 plenty grippy, so not sure if any more grip is really required for myself. Having said that I like everything else about the Sage 5 - I might have to try one....
