Use a harder and tougher tool steel, M4 or Rex45.
BTW, I find Maxamet easier to sharpen than S110V, but then I use a Japanese wetstone.

I wonder if REX 45 at 66rc would microchip against something like this. Jobs like this beg for microbevels.
