I used to try to match the factory bevel, and will still do that for touch ups before a full sharpening. During a full (freehand) sharpening, I used to do 15-20°/side. We conducted some "team building" on the evening shift, and my PM2 cut lots of foodstuffs:

Two impulse buys: St Nick's Lil Native exclusive and Cruwear Delica.

It's a great design, but the bland backlock version is uninspiring for me. The thickness behind the edge is also a bit too fat for such a small knife.
