Sanyo has a series of Nitrogen-alloyed superhigh speed steels and Hitachi has some Nitride-based sintered ultrahard materials.
Of course also Bohler-Uddeholm N-steels are intriguing.

The Rock Salt has an excellent geometry but it is a bit small and not as heavy as a chopper.
The blade length should be at least 10 '', with a thickness of ~ 0.3 ''.

I regrind by myself all my knives up to a zero ffg.
The only ones I obviously do not dare touch are my Higo and Hizen.
I also apply a high grit on all the blades that i use, except on high V steels and on my rockys.
Sometimes i (re)build their handles with Ipé wood.

It depends on what DLC. I hate the opaque black thing that some people apply on knives and that scratch after two minutes, but i love the TiN or the DLC that Rockstead use, practically scratch proof and mirror polished. Hitachi have some supercoatings, and i hope that we can see them not only on +$2...
