A dark blue like the Emerson Openers makes a lot of sense. However, my prediction is black and if I could choose it'd be foliage green.

It's a fantastic folder. To me there's no reason to consider similar models like the Delica or Dragonfly.

I also suggest a Police4 (or a Police3 if you want stainless). Despite its name, I think it's better suited in the kitchen with its long thin blade (112 mm x 3 mm). CPM Cruwear, CPM M4, and K390 would be great (or other tool steels). I would buy any of those in a foliage green FRN handle.
