My experience with AEB-L is limited to a 8" chef's knife at 61-62HRC. It is a dream to sharpen and takes a very keen edge which are great properties in the kitchen. I would love to see a Stretch in AEB-L but doubt that is possible since it is a Japan produced model. It sounds like a broken reco...

I have not seen any reprofiling on site but there has been a couple different table holders who have offered knife sharpening for a fee at previous shows.

Lance, I really like your Stretch regrind. I have been wanting to do something similar to one of my many Stretches but am leaning towards removing the hump entirely with a finished blade that looks very similar to a PM2. I like how yours turned out, how do you like the reground blade in use?
