When it was time to pick a knife to carry this morning I realized I hadn't carried a Delica in awhile. I had the K390 Endela on me a few times recently. They're both great IMO. Flip a coin. You might find SPY27 a little easier to sharpen but S30V is pretty easy to touch up on the Sharpmaker once you get the hang of it

I've not heard of any Paysan fakes at this point. Considering a integral I kind of doubt there'll be counterfeits made but I've been wrong before
