Funny you should post this. For many years I have been thinking on and off that,if I'm honest with myself, all I really need is a Delica. It just works for me in just about every roll I have for knife.
So, I don't find your Delica benchmark out of the ordinary at all. Good post.

Is it just me or do you also pass on a purchase of a Spyderco knife made in Taiwan? Am I wrong to think that the quality of the knife is inferior to one made in the USA or Japan. Please explain to me why I may be wrong. Remember: Spyderco is a US company and Taiwan is an ally to the US so it's good...

Sadly mine is more negative. I regret an impulse purchase of a Positron. The action is bad and the knife fits poorly in my hands. A very unSpyderco experience for me.
Happily, it was more than balanced by the wonderful Cru-wear Para 2.

With low cost kitchen knives, I just use them. The grinds will even out over time with use and sharpening.
