One reason the blades are ground only on one side MAY be it's just easier or faster for manufacturing. I'm not 100% sure about that but I believe if putting a bevel on both sides of a serrated edge would perform better that's what Spyderco would do. I think it's actually extremely difficult to grin...

I've EDC'ed a Native -- 1st gen, then more recently a the FRN/S30V model -- for I dunno, 10 years? It's a great knife.
