Do you actually know what 5mm looks like, because if the washer is moving that much the whole knife should be rattling. 5mm of movement would indicate someone put a giant washer in there by mistake and it is free floating around the pivot. I think most who want to invest in quality knives prefer to buy the knives they will use rather than accept a set which may have unnecessary knives. You can always buy a block separate.

If you use your knife, and you should, you will eventually pick up tiny dings along the way. They will sharpen out over time.
