VG10 Gyuto. Nowhere near as good as some of you guys but I'm still learning. Pretty new to freehand. This was Shapton Glass 1K and 2 micron strop. Just a few minutes of work.

I think some of you are missing my point. I'm not saying the Sage line is "too good" in the sense that it is the knife of all knives and no one should ever make another knife again, although it is a really great piece. I'm saying it is too good of a knife to me limited to S30V/Maxamet and ...

Got mine. This is a wonderful piece. Never had a Taiwan compression lock and **** this thing is dialed in. Action is butter straight out of the box. Exponentially better than any Golden compression lock I've ever had. Extremely light, great ergos (lack of jimping doesn't bother me at all) and cuts l...
