Hardness with good microstructure is an important factor for edge stability. It's not just carbide size, volume and raw toughness from lower hardness. This!! What makes a good knife steel is a good balance of these qualities, and getting a HT with the hardness as high as you can get it for the task...

You can always try rotating the base of the Sharpmaker. Someone years ago came up with a formula to get a specific angle, and I wrote a small computer program that you can run in your web browser that will tell you what angle is the base needed to be turned to get a specific angle.

DBCajun, Make sure you use the coarsest stone for most of the work, ie use the coarse stone for most of the time you are sharpening, everything else is just refining the edge and minimizing the burr. The way I would look at it is not the steels purpose, but the knife's purpose, then selecting the steel by it's attributes.

I found the same thing with my Spyderco Merlin and Byrd Meadowlark 2 Hawkbill. I really like the more rounded serrations on the Byrd vs the Spyderco one. I recently gifted the Byrd to my neighbor so I need to get another one, and I really like EDC'ing the Merlin as a secondary knife.
