Get the steel you think you can sharpen best. Until you can sharpen them all about the same, the easiest to sharpen will be the best performer. If you’re already there then I’d try K390. I’m not a super steel guy but that one might be worth trying.

1045, 1055, 4140, 4340, and 1075 are all steels I’ve considered for a machete. S7 is extremely tough but you can hit a rock full swing and the others won’t break so I don’t know if it’s beneficial and S7 is much more expensive than the 10xx steels. I’ve shot a bow since I was 10 and taken it hunting a few times but never actually shot at anything. I never had the confidence to actually shoot at something alive. I always shot a recurve without sights.

My reground Delica hands down. I’ve had it so long I’ve ground down the kick twice to get the point back inside the handle. I’ve reground the blade to thin it down and get it to cutting geometry.

How much control do you have over the angle you want? To truly optimize the angle you’ll have to experiment and go lower a little at a time and see if the edge is damaged.
