They are all brittle, so that is a moot point. Depending on the abrasive S90V can be harder to grind but this can be completely eliminated with high end abrasives like a ceramic waterstone or some good diamond like Atoma, or cbn. Even high quality traditional waterstones can make quick work of S90V....

In Spyderco's lineup? The only other similar steel, V Toku was also a sprint. That is what you are looking for.
These steels are really kitchen knife steels. They excel at push cutting on a cutting board with very fine edges. When draw cutting they get blown away by steels like S30V or ZDP-189.
