z-max should be fine for hunting and fishing. For kitchen duty, I'd recommend something a little more stainless. Hi again! I have the pd1 mule that I take fishing and camping. I have yet to stain it (or even rust it for that matter). Z-wear is likely a semi-stainless while maxamet tends to rust if neglected for too long.

Now that you mention it, I've never chipped my s30v knives. However, the edge degrades quickly to a working edge. Much faster than maxamet. I have a few stains on my maxamet knife, but nothing major. I take good care of it though. I suspect the two are roughly equivalent.
