Salt knives and fish pics :)

Well, the fishing has been pretty terrible here lately but I got a little dinner today at least and my salts got a much needed workout! They get hungry when they aren't eating enough!

The needlefish have been spawning and there are some big ones around. I just caught the biggest one I've ever seen! I didn't even know they got over 6-8 pounds but this one went close to 20! Full of eggs too! This gal had over a kilo of eggs! And even though most lifelong fisherman don't know it, needlefish eggs are about as good as they come! If I'm lying I'm dying!

Ok, here's some gratuitous knife/fish porn.

*Sigh*. Such a pain that they block photobucket and some other pic sites here at work. I'll have to wait 'till I get home tonight to look at the pics in this thread . No rhyme or reason to their security protocols here .

Yeah, they do kind of have that prehistoric look like a gar. A word of warning though....they are totally different fish (obviously since one is saltwater and the other fresh) so if anyone takes my advice about eating the eggs do NOT try to eat gar eggs!! They are highly toxic and can be deadly!

The large needlefish have very white meat and are surprisingly delicious. Filet those and fry them in olive oil and seasoning. The snapper we bake whole with a spicy olive oil and onion sauce I make. The eggs are already gone. My girlfriend loves them even more than I do!

Do you eat the eggs raw, cured like other roe caviar, or cooked in some way? I've always liked the smaller variety of eggs used in sushi but could never get into the salmon roe.

The eggs are quite large (about bb sized). We fry them in a little bit of olive oil and some Tony Chachere's seasoning. So good!

Oh and I bought my sister a PE Tasman today ( they had no Tasman SE at the local shop) for her hiking SD tool. She had my Orange Dodo sprint but I asked for it back under the condition of a replacement
