My most used knives are probably my kitchen knives which are just cheap,crappy mystery steel knives. I have been planning for a long time to get a local blacksmith to get to make me one in 52100(bearing race steel).
So now it's done and it's a demon slicer. 2mm thick, 3 inches wide(at the widest point), and about 9 inches in length. Since I got it from the smith with a very thin grind, I immediately microbeveled at 36 inclusive, and finished with a 1000 grit Edge Pro stone. At the 1000 grit finish, the 52100 is scary aggressive.
This knife just falls through the media. I wonder why I waited so long to order this knife. The smith really knows his business. It might not look pretty but ergos are pretty dang excellent. I use a pinch grip with my index finger on the spine and the knife just feels like a part of my hand. It cost me all of $7. I'd say I got a good deal on this.
