    Show your BBQ!

    I am sure I am not alone in loving a good BBQ. My wife bought me a smoker for Christmas which I modified and I am loving me some smoked BBQ! Show your "Q" either from a smoker or grill

    did some ribs for the super bowl and a chicken last weekend-

    Thank you, Thank you, Thank you. For some reason lately, my pet peeve has been folks, with Spring almost upon us, bragging about their "BBQ" and it turns out to be frozen burgers/chicken strips/flank steaks splashed with bottle sauce on a grill that got cooked in less than 10 minutes......

    Good lookin' stuff here, may have to get some ribs this week.

    Cool Kansas City, Missouri: The BAR BQ Capital of the USA!!

    I am not a competition Bar B Quer even though I do have a couple of friends that are and do compete in it.

    However I do happen to be from the BAR B Q Capital of America and that is the great town of Kansas City, Missouri. We are the "UNDISPUTED BAR B Q Capital of the USA

    The heavyweights in that arena are Gates & Sons, Arthur Bryant, Rosedale Bar BQ, Haywards of Overland Park KS, Bates City Bar BQ, Zarda Bar BQ, McGonigle's, Chubby's, and quite a few other mom & pop joints throughout the city.

    If you all are ever in Kansas City, Missouri/Kansas then I do recommend that you hit Gates, Rosedale and/or Bryants.

    A little factoid of Arthur Bryants>> 7 USA Presidents have eaten there and 4 of them on multiple occasions.

    my ribs take 4.5-5 hrs and chicken takes 2.5 or so

    seasoned(salt, black pepper, cayenne, granulated garlic/onion, brown sugar, etc.) then wrapped in plastic wrap and tinfoil. leave in frig overnight. place in roasting pan to catch any juices that spill. cook at 300 in oven for approx. 2 1/2-3 hrs. until the bone is able to be twisted slightly. unwrap from foil and let sit for 15 minutes to firm up so they don't fall apart when it's finished on the grill. starting bone side down on medium heat. flipping every 3-5 minutes depending on desired char you like and saucing each time for 2x per side. I like to use sweet baby rays sweet and spicy, kicked up with a little bit of soy sauce and white wine or beer to thin it as well as some of the fat juices from the foil/pan.

    best method available with the resources on hand. plus, everyone likes them that way. the meat on a well cooked rib isn't supposed to fall of the bone. it's supposed to leave a bite mark and be very tender at the same time. that's how these come out. but, it's a fine line between coming off the bone with help or falling off, if you know what I mean.

    if I really had more time and patience I would get some fruit wood and bust out the weber. only thing is I can't cook 4-5 racks on one grill. would need to get a second grill and that's just more work.
