THat knife splitting the bullet has been used for their catalogs for many years. I think it's true, indeed bullets can be softer than steel.

Bullets are usually made with a lead core and a thin copper alloy jacket...
Some handgun bullets (target loads) are made from pure lead, no jacket.

there are of course exceptions to this, leadfree bullets made from copper, armour piercing bullets with either a hard penetrator core (steel or tungsten carbide) or a hard jacket (steel usually)...
