My wife doesn't like paring knife also. I bought her Shun and she is quite happy with it. I do not use paring knife much either. I always have something in my pocket, which I like more :) . Out of my Spyderco kitchen knives, Yang is most used. But I do not have Homemaker (I remember that you have one) or Sushimi. They would be great on kitchen. My wife does more and much better cooking than I am, but I started to spend much more time on kitchen after I got few decent kitchen knives.

New pics of old fixed blades

#602

Post by Mr Blonde »

While doing some site maintenance, I came across several pics of my old fixed blades that simply weren't up to snuff. So I took some new ones.

That's a pretty nice collection of Dodo's!

I went to change the clip on my Carbon Fiber Dodo to a low rider clip, and noticed that the CF Dodo doesn't use an entirely normal clip. The slots in the scale are thinner and the clip is ground a little thinner to fit into the slots. I had to rub the low rider clip on a sharpening stone to get it to fit.

They say they changed some angles on the lock for the new ones. On mine it seems like the angles don't work perfectly with the Ceramic Ball. The ball is pulled away from the back spacer as it rolls over the detent corner and has a slight clicking sound when it lands back on the back spacer.

Since I was photographing the Balance, I decided my old(er) customized Delica needed some new photos too.

WOW.... that balance is nice, but the Delica is mind-blowing. Who made that blade?

Ed Schempp made both the Delica's blade and the Balance's handle using Devin Thomas made stainless damascus.

Both are stunning. How long ago did Ed make that for you?

The Delica must have been from around 2008 IIRC, and the Balance is from 2013.

nice little write up as well. The part where you say the chaparral 3 might become a more sought after knife in the future. Do you think spyderco would discontinue the chaparral 3 for lack of sales when it is in a series?

I got to handle this knife when I was at the SFO. It opened incredibly smooth. Thank you for sharing.
