I had bought the Prime Rib a while back and didnt want it frozen any longer. Just threw caution to the wind lol.
Don't feel bad, I cooked a ham and a beef tenderloin roast.

Started as whole chicken breasts, ended as sweet and sour.
A bit too sweet, I'll adjust it a bit next time I make it.
What do you use for the breading?
Mix the chicken pieces with one egg. Then take a few grocery bags(doubled or tripled) and put a bit of flour in them. Season the flour, put the chicken in the bag and start jostling the handles.
That's it, just throw them in the oil and cook.

This thread, and extra time on my hands, have inspired me to try a batch of fried chicken this weekend. I know I will try the buttermilk soak, I've heard all good about that, but not sure on the other details yet. It should be fun though. I'm going to do it outside, in an electric skillet. We are having nice weather, and it will be a little change from grilling out. Wish me luck!
I’ve never been able to post pics (I don’t even know if I’ve ever taken a digital photo before), but the last meal I cooked is called tamale pie. It has a cornmeal base in a casserole dish, with ground turkey, chopped onions and jalapeños, corn, olives, tomato sauce, and topped with more cornmeal and shredded cheese, with some chili powder on the cheese. I’m single, so one dish provides a few days worth of leftovers, before cooking something else. I cook twice a week. It’s one of the dishes I learned to make from my late mom, but mine is slightly different from hers (a little spicier).

The weird thing is, it’s not exactly like eating tamales, so I’m not sure where the name came from. I forgot to mention that I always cook using extra virgin olive oil. My mom also used to make ‘enchilada casserole,’ which used tortillas and enchilada sauce instead of the cornmeal and tomato sauce. For some reason, I was never able to master that one.
