But when youre looking to real no-nonsense, have a look to the alox Farmer.
Thats the same as what was the Original Soldier but extended with a saw. Makes it even better than the Original Soldier.

Besides these I also have a Bantam.
This one is based on the smaller Cadet line.
The Bantam has not many tools but a special multifunctional tool. It can do more than you on first sight expect but it will perform less than the normal tools on other saks. Its a very slim design that fits in your wallet or suit.

What do my fellow forumites consider to be the most well engineered SAK model with the most useful features, BUT without an overabundance of non-essential items?

In other words "the most bang for the buck" in terms of price & size?

SAK Compact model.

Perfect for urban EDC, with only one useless tool (the thick, blunt hook).

That is a tough choice but for me I would either go with the Super Tinker or the Explorer. The Explorer to me has the most useful tool setup and at 4 layers it is about as thick as I would want to carry in my pocket. I use a P-7 clip, which works very well.
