Its hard for me to explain but I feel the PSF27 gets that numb edge that cuts really well, and S30V gets that screaming edge loud more aggressive in a way. I love the squeak I actually got it for my wife in pink at first, but after I handled it for a couple of days it was just a matter of time until I got mine. Sure did a couple of weeks later. so far just the large 6" utility black PE, black SE, blue SE. The smaller utility 4" black PE, black SE, Red SE. The black small paring and the Santoku that is it that is all they show. Waiting to see if they come out with a chefs knife and boning knife.

I usually go for H1 models but VG10 also will work it has better edge retention on PE. My preferred knife is a Salt 1 SE and a DGF H1 SE(have it with an attached key floater to it) that is for utility and everything else but for cleaning fish I just use one of those Rapala Martini 7 1/2 fillet knives.

Santoku knife and small paring knife should get them in early next week.

Well did not have to wait until monday ordered a Santoku and small paring, paid and on their way.

I would go with the Tatanka Spyderco knives are much nicer than CS in my opinion. Dont get me wrong I got my share of CS knives but I rarely carry them.
