Victorinox uses X55CrMo14 (1.4110) steel. It can be seen in a National Geographic documentary.

With a little work and some materials you can make some interesting hybrids.

What do you think about a button lock?
I mean a true button lock like some pro-tech or klötzli swiss border guards. With the smooth opening that the sage 5 has, it would be a really fun lock.

Someday I will upgrade my kitchen knife set with an itamae knife, because they are really attractive.
Or, if I get really crazy, create a similar one by forging a sanmai with an Aogami core.

I was hoping my suggestion about cutting boards would lead someone to guess. 😁 So now I can ask if you've ever had problems with super blue core, because maintenance and possible rust issues have always stopped me from using non-stainles...
